Boil & Bake in Costa Mesa is redefining what a bagel shop can be, blending the heart of classic New York-style bagels with a fresh, Californian twist. Nestled at 270 Bristol St #114, this vibrant spot is a beloved destination for locals craving that perfect bagel experience elevated by thoughtful, high-quality ingredients and inventive combinations.
The star here is undoubtedly their bagels — whether you’re drawn to the Fully Loaded Lox and Bagel piled high with silky salmon, cream cheese, capers, and fresh herbs, or the Santa Monica sandwich that brims with tender salmon lox and juicy heirloom tomatoes. Each bite bursts with layers of flavor, from the tangy cream cheeses like Horseradish or Scallion Chive to the nutty crunch of Toasted Sesame Seeds. The Blueberry and Breakfast Bagels offer sweet and savory options alike, complemented perfectly by freshly squeezed juices or a robust cup of their Common Room Roasters drip coffee.
Patrons rave about the bold, well-curated menu items such as the Garden Bagel - lush with salted cucumber, radish, and sprouts - and the Pizza Bagel Special, which turns a humble bagel into a melty, savory delight. For those who love a hearty start, the Breakfast Sandwich or Burrito, alongside sides like Housemade Apple Compote, effortlessly satisfy morning cravings with fresh, vibrant flavors.
The atmosphere at Boil & Bake carries an inviting, casual California vibe. Though the buzz and popularity can mean waiting in line, guests agree the experience and the taste more than justify the anticipation. Customers have shared glowing endorsements, with one Brooklyn transplant saying, “I moved here from NYC and no longer long for NYC bagels. This place more than hits the spot,” signaling the quality and authenticity of Boil & Bake’s offerings. Another customer fondly called it “the best bagel ever” and recommended waiting in line because it’s absolutely worth it—proof of the shop’s devoted following.
Some mention the bagel itself can be a bit tough, especially when ordered to-go, but the flavors and thoughtful composition of each sandwich more than compensate for that slight texture critique. Pricing is on the higher end, but many customers feel the exceptional ingredients and crafted taste justify the cost, calling it a true local favorite deserving of its loyal fan base.
Whether you’re a bagel connoisseur or simply in search of a fresh, inventive breakfast or lunch, Boil & Bake delivers a uniquely satisfying experience crafted to leave a lasting impression. It’s no surprise that fans are already eager for expansion and wishing for a second location to bring these standout bagels to even more communities.
For a bagel shop that pushes the boundaries of tradition while honoring classic flavors, Boil & Bake is a must-visit gem in Costa Mesa.
Bagel looks amazing. Everything great except the actual bagel itself. I saw in another review someone said bagel was on the tough side & unfortunately it’s true.. 7/10 Ordered to go so can’t say much about the rest. Except it was made quick! Picked it up in 8 mins. If the bagel wasn’t as tough this would be a 10/10!! Pricey at $20 a bagel
Moved here from NYC and no longer long for NYC bagels. This place more than hits the spot. Amazing salmon and tomatoes.
The best bagel ever. I love their salmon one I forgot the name. And also the New Yorker. It’s the best it’s so worth it to be in line for an hour to get this , so definitely try it
Boil & Bake is a solid bagel spot with California flair. Be prepared to wait at least half an hour outside before you are able to enter because this is a very popular spot. I ordered the Santa Monica because I wanted a sandwich with salmon lox. I waited about 10-15 minutes for my sandwich to be made. It was tasty and delicious. It was priced reasonably as well. I can see why this is a local favourite. It is worth a 30-minute wait in line.
Best bagel I've had. And I've been to New York a few times. Just give this place a try. So so good. Ratios were spot on. They NEED a location in San Diego next.
Bomb bomb BOMB!! Something about this place just tasted so fresh, even the olive oil is something we were commenting on! Bread was very fresh tasting. Line took a while but it was worth it. Food came out very quickly after we ordered. The servers were also very kind, made nice conversation with us, and cleaned tables quickly. We got the loaded lox and the OG and loved both. Can’t wait to go back and try some of their other bagels!
Absolutely INCREDIBLE restaurant, there was a line out the door when we arrived and we are so glad we stayed. The atmosphere inside was awesome, great music, 90s and 00s Pop Punk jams, open kitchen so you can see the shop humming behind the scenes, the people working the cash register were quick, helpful, didn't ask for any clarification, just knew what they were about. The food is absolutely insane. I'm from a Jewish hub and have never had a bagel this good, its crunchy and chewy and has a wonderful crust. Super high quality ingredients, and the combinations of flavors in the sandwiches we got were superb. Every bite was different, but every bite was delicious. If you like bagels, and high quality bagel sandwiches, you NEED to try this place. It's worth the wait, even if the line is out the door.

Every sandwich is stacked with fresh, high-quality ingredients, and the flavor combinations are out of this world. Whether you go classic with bacon, egg & cheese or adventurous with their specialty creations, you can’t go wrong. The spreads are rich and flavorful, the portions are generous, and you can tell everything is made with love. The staff is friendly, the vibe is welcoming, and it’s the kind of place you’ll find yourself coming back to again and again. Easily the best bagel spot in the area!
